I'm interested in learning how to cook french cuisine and I was wondering what is a really good book on french cuisine and techniques. There's just so many in the bookstore that I don't know which one to pick.

JUlia Child's Mastering the art of french cookcooking I and II – written in 1961 and 1970 is pretty much the standard for French cooking technique – she studied at the Cordon Bleu school in Paris

Just no comparing cooking products and anything else would be fine. (:

You could study the acid-base reaction that causes baking to rise, and report your findings, etc…or you could adjust the amounts of baking soda/tartaric acid and monitor the results. (Hint: Google ‘limiting reagents’ and ‘excess reagents’.)

Baking soda reacts with tartaric acid to form gas, in the following reaction:

NaHCO3 + KHC4H4O6 —-> KNaC4H4O6 + H2O + CO2

:) I had fun with it in Chem class, though I’ve never done it for a science fair.

Cooking healthy?

Hi I am on a huge diet kick. I want to start cooking as healthy as possible. Has anyone tried the raw diet? When you dont every actaully cook the food? I am interested in learning about that! Also does anyone have any good recipies for some yummy healthy foods?

I know what you mean. I'd like an answer also. It's not a rude question at all. I want to see Italian people in an Italian restaurant. If I wanted to have mexican people, I'd go to the mexican restaurant!!

I must perform a lab to prove which fuel (out of ethanol, isopropanol or liquid paraffin) would be the best for cooking for interior camping. How would I show, with a lab, the best cooking fuel to use?

Quickie (no lookie) answer: the higher the % O, the lower the calorific value

Of course there may other reasons BESIDES calorific value (medicinal value ala the elixir "Hadicol") and CO and soot generation. All generate CO2.
